Recipe: Chocolate Nut Cake

I tried this recipe for a Rich Chocolate Nut Cake. It was nice. But to me, it felt more like a brownie than a cake. It was quite dense and you can't really eat too much at a go. Just a little at a time felt good. So here's the recipe.


Ingredients

225g butter
225g plain chocolate
115g cocoa powder
350g caster sugar
6 eggs
85ml brandy
150g finely chopped hazelnuts (I used walnuts but I think hazelnuts would be much better)


Instructions


1. Preheat oven to 180 degree celcius and line a 9 inch by 2 inch round tin with greaseproof paper and grease.


2. Melt the butter and Chocolate together in a double boiler. Set aside to cool.


3. Stir the cocoa into a bowl. Add sugar and eggs and stir until combined. Pour in the melted chocolate mixture and brandy.


4. Fold in the hazelnuts and pour into the tin.


5. Set the tin inside a large tin and pour 1 inch of hot water into the outer tin. Bake until the cake is firm to the touch which is about 45 minutes.


6. Once baked, unmould and let cool.
