Recipe: Some sort of chocolate cake

Ok, I saw this chocolate cake like recipe. I thought of trying it. Turned out quite nice. Only sad thing is I was too lazy to make the topping for this cake. The cake itself tastes good! But I think it will super good with the topping. Why don't you guys try and tell me how is it? :)


Oh ya, I am sharing with you the full recipe, my photo will show you quite a thin cake, thats because I didnt have a smaller tray and I only used half the amount of ingredients just for trial sake, so ya, the cake is supposed to be at least twice the thickness you see in the picture. Just follow the recipe ya, from the taste of this, i really think it should turn out awesome.


Ingredients for the cake

115g plain chocolate
85g unsalted butter
55g sugar
4 eggs, separated
1 extra egg white
1/4 teaspoon salt
70g plain flour, sifted


Ingredients for the topping

250ml of water
15g unsalted butter
170g plain chocolate
85g sugar

Instructions


1. Preheat oven to 170 degrees celcius and prepare a 9inch by 2inch tin.

2. Melt the chocolate over a double boiler and set aside.

3. With an electric mixer, cream the butter ad sugar until light and fluffy.

4. Stir in the melted chocolate.

5. Beat in the yolks one at a time.

6. In another bowl, beat the egg whites with the salt until stiff.

7. Fold a dollop of egg whites into the chocolate mixture to lighten it. Then fold in therest of the egg whites in 3 batches, alternating with the sifted flour.

8. Pour into the tin and bake for about 45 minutes.


Now for the topping

1. Melt the butter and chocolate in a double boiler.

2. In a heavy saucepan, dissolve the sugar in the water over a low heat.

3. Raise the temperature to about 107 degrees celcius, check with a cooking thermometer.

4. Then immediately plunge the pan into cold water for 1 minute. Pour into the chocolate mixture and stir to blend. Let it cool for a few minutes.

5. After topping and cake is cool, pour the topping over the cake starting from the centre, working outwards in circular movement. Use a palette knife to smooth the topping and also the sides of the cake. Leave to set over night.

 Here's a pic, but remember, this pic is without the topping and it is only half the thickness it is supposed to be. If you follow the recipe, it will be twice the thickness and with icing on the top. Enjoy! It WILL be good!

Recipe: Boston Cream Pie

This is called boston cream pie. Was quite apprehensive as to how it might turn out. But I'm really surprised. It tastes very good. This cream in the middle with the top icing seriously complements the "pie" itself. Why did I say "pie" instead of pie? Because this seems more like a cake to me. Hahahaha! Whatever! All I know is that it tastes awesome!


Ingredients for the pie

225g flour
1 tablespoon baking powder
1/2 teaspoon salt
115g butter
200g granulated sugar
2 eggs
1 teaspoon vanilla essence
175ml milk


Ingredients for the filling in the middle

250ml milk
3 egg yolks
90g granulated sugar
25g flour
15g butter
1 teaspoon vanilla essence


Ingredients for the chocolate glaze

25g plain chocolate
25g butter
50g icing sugar
1/2 teaspoon vanilla essence
about 1 tablespoon of hot water

Instructions


1. Preheat oven to 190 degrees celcius.

2. Prepare two 8inch by 2inch round baking tins.

3. Sift flour together with the baking powder and salt.

4. Beat butter and sugar until light and fluffy.

5. Add the eggs one at a time. Then stir in vanilla essence.

6. Add milk and dry ingredients alternately, mixing only enough to blend thoroughly. DO NOT OVER BEAT THE MIXTURE.

7. Divide the mixture into the 2 tins and spread out evenly. Bake for about 25 minutes, until a skewer inserted in the middle of the cake will come out clean.



Now for the filling


1. Heat the milk in a small saucepan until it boils then immediately stop and put aside.

2. In a heatproof bowl, beat the egg yolks until smooth.

3. Gradually add in the sugar and beat till its pale yellow.

4. Beat in the flour.

5. Slowly pour in your hot milk and beat constantly while pouring.

6. Once all milk poured and stirred, place ur heatproof bowl over a double boiler.

7. Stir constantly until thicker. Then remove from the heat and stir in butter and vanilla essence.

8. After the cakes have cooled, use a sharp knife to cut off the dome of the cake so that it is flat.

9. PLace one cake on your serving tray, pour the filling on it and spread evenly till the edges. Then place the other cake over this cake.
 Now for the chocolate glaze:


1. Melt the chocolate with butter on a double boiler.

2. Once it is smooth, remove from heat and beat in the icing sugar to make a thick paste.

3. Add in vanilla essence.

4. Add in about 1 tablespoon of hotwater. If the glaze is not in a spreadable consistency, you may add more hot water.

5. Spread the glaze over the top of the cake and you may want to dust with icing sugar.

 Remember to refrigerate this because the filling will melt at room temperature.

Recipe: Chocolate Chip Muffins

Chocolate chip muffins, really very nice. Definitely taste better than those you can make from pre-mixes.


Ingredients

115g butter
70g sugar
30g brown sugar
2 eggs
215g plain flour
1 teaspoon baking powder
125ml milk
170g chocolate chips

Instructions


1. Preheat oven to 190 degrees celcius

2. Use an electric mixer to cream the butter until soft.

3.Add both sugars and beat till its light and fluffy.

4. Beat in the eggs one at a time.

5. Sift the flour and baking powder twice.

6. Fold into the mixture, alternating with milk.

7. Mix in the chocolate chips.

8. Divide the mixture into muffin cups or in a muffin tray. Don't overfill the cup/tray, just half to 3/4 level will do, because it will expand.

9. Bake for about 25 minutes.






Awesome muffins are ready! :)

Recipe: Carrot Cake

All carrot cake haters, it i time for you to bake your own. That is when you will realise, carrot cakes are AWESOME!!!

Ingredients
450g peeled and grated carrots
170g plain flour
2 tsp baking powder
1/2 tsp bicarbonate of soda
1 tsp salt
2 tsp ground cinnamon
4 eggs
2 tsp vanilla essence
115 brown sugar
55g caster sugar
300ml sunflower oil
115 finely chopped walnuts
85g raisins

Instructions1. Preheat oven to 180 degrees celcius and prepare a 11inch by 8inch tray.


2. Sift the flour, baking powder, bicarbonate of soda, salt and cinnamon and set aside.


3. Beat the eggs until well blended with an electric mixer. Add vanilla, sugars and oil; beat to incorporate.


4. Fold in the dry ingredients in 3 batches.


5. Add the carrots, walnuts and rainsins. Fold in as well.


6. Bake for about 40 minutes and let it cool.












This is real awesome as well. My mum loved it.

Recipe: Lemon Mousse Cheesecake

Ingredients
1.2kg cream cheese at room temperature
350g caster sugar
45g plain flour
4 eggs, separated
125ml lemon juice
grated rind of 2 lemons


This may be quite a big cheese cake and you will need quite a big tray and mixing bowl. Feel free to reduce the size of portions by half if you want. :)

Instructions1. Preheat oven to 170 degrees celcius and prepare a 10inch by 2inch cake tin.


2. Beat the cream cheese with a mixer until smooth. Slowly add 285g of the sugar and beat until light. Then beat in the flour.


3. Add the egg yolks, lemon juice and rind and beat until smooth and well blended.


4. In another bowl, beat the egg whites until they hold soft peaks. Add the remaining sugar and beat until stiff and glossy.


5. Add the egg whites to the cheese mixture and GENTLY fold in.


6. Pour the mixture into the prepared tin and place this tin into a larger baking tin. Place in oven and pour hot water in the outer tin to about 1 inch.


7. Bake until golden for about 60mins. Let it cool and refrigerate for at least 4 hours.


To serve, cut with a real sharp knife dipped in hot water.





REALLY REALLY GOOD!!! NO KIDDING!!!

Recipe: Rich Chocolate Pie

Ingredients for the pie
85g plain chocolate
55g butter
3 tbsp golden syrup
3 eggs, beaten
140g caster sugar
1 tsp vanilla essence
115g milk chocolate (for decoration)
500ml whipping cream


Ingredients for the pastry
165g plain flour
1/2 tsp salt
115g shortening
2-3tbsp iced water

Instructions1. Preheat oven at 220 degrees celcius.


2. For the pastry, sift the flour and salt into a mixing bowl. Use a pastry blender to cut in the fat until mixture resembles coarse breadcrumbs. Sprinkle in the water 1 tablespoon at a time. Toss lightly with a fork until pastry forms a ball.


3. On a lightly floured surface of an 8 or 9 inch pie tin, roll out the pastry.


4. Use a fork to prick the bottom and sides of the pastry. Bake until brown for about 10-15 minutes.


5. Let it cool.


6. On a double boiler, melt the plain chocolate, butter and golden syrup. Remove the bowl from the heat and stir in eggs, suger and vanilla. Try to let the chocolate cool first to prevent the heat from cooking the eggs.


7. Preheat oven to 180 degrees celcius.


8. Pour chocolate mixture into the pie tin and bake for about 40 minutes.


9. For decoration, make chocolate shavings out of the milk chocolate bar.


10. Before serving, lightly whip the cream till soft peaks form. Spread it over the cooled pie and decorate with your milk chocolate shavings.
