Recipe: Creme Brulee

Alright, finally I tried to make this; CREME BRULEE. I have always loved the name of this but I have never eaten or tried it anywhere before. So I finally found a recipe and realised its quite easy to do. Here is the recipe for you to try as well.

Ingredients

8 egg yolks
2 cups heavy cream
1/3 cup caster sugar
1 teaspoon vanilla essence
some sugar for the caramalised tops

Instructions

1. Preheat the oven at 150 degrees celcius.

2. Whisk the egg yolks and sugar in a large bowl until the mixture becomes thick and yellow. Then add in the cream and vanilla essence and carry on whisking until well-blended.

3. Strain into a large bowl and skim off any foam or bubbles.

4. Divide the mixture into 6 ramekins/custard cups and place them in a bigger tray. Fill up the bigger tray with about 1-2 inches of hot water and bake until set around the edges but loose in the centre. This will take about 50-60 minutes.

5. After baking remove from oven and let it cool in the water bath itself. Once cooled, put in the refrigerator for at least 2 hours or overnight. Before serving, sprinkle some sugar over the top and use a hand-held torch to caramelise the sugar.

Personally, I did not do the caramelised sugar tops because I did not have the torch but I felt the custard itself was sweet enough and the sugar top was not necessary. :)
